Whole milk powder contains fatter and is easily deteriorated by high temperature and oxidation. If the whole milk powder has a moisture content of more than 5% and the storage temperature is above 37 °C, browning and clot are likely to occur, then the shelf life of milk powder will be shortened. The skim milk powder does not change as described above. So the pricing of milk is higher.

When the whole milk powder is reconstituted into fresh milk by water, a foamy scum is formed on the surface, which is a mixture of fat and protein. Skim milk powder has more lactose content than whole milk powder, so it has a strong moisture absorption capacity. Once the milk powder is wet, it will change the colloidal state of the protein and reduce the solubility in water.

The milk nutritional content of whole milk powder is 25.5% protein, 26.5% fat, 37.3% carbohydrate, and 979 mg calcium, 685 mg phosphorus, 1.9 mg iron, 0.8 mg riboflavin and 0.6 mg niacin per 100 g. The milk nutrients content of skimmed milk powder is 36% protein, 1% fat, 52% carbohydrate, 1300 mg calcium, 1030 mg phosphorus, 0.6 mg iron, 40 vitamin A (international unit) 40, thiamine 0.35 mg, Riboflavin 1.96 mg, niacin 1.1 mg, and traces of ascorbic acid per 100 g. The whole milk powder has fewer minerals, but because of the higher fat, the milk calories is higher than that of skim milk powder.
